SEVEN-STAR SEAPERCH WITH SWEET & SOUR SAUCE

Ingredients:

Seven-star seaperch, gutted and cleaned 600g
Finely chopped ginger 10g
Chopped Red Pepper 50g
Finely chopped carrot 30g
Sweet pees 30g
Chicken stock 1 cup
A few stems of Coriander

Seasoning:

Salt 5g
Sugar 1/4 cup
Vinegar 10ml
Chinese cooking wine 10ml

Preparations:

1. Make several diagonal cuts at 1 finger-wide spacing on both side of bellies.

2. Smear the fish with Chinese cooking wine, salt and ginger.

3. Well coat the fish with starch.

4. Pre-heat the oil before it smokes, gently place the fish into the oil till the fish turns golden.

5. Drain the oil and place the fried fish onto a plate.

6. Pour 2 tsp oil into a frying pan, fry red pepper, carrot and sweet pees till cooked.

7. Heat the tomato paste, vinegar, sugar and chicken stock, add in all the cooked vegetables till boiled

8. Pour the sweet & sour sauce onto the fish, garnish with coriander stems, ready to serve

 

STEAMED BLACK TILAPIA WITH FERMENTED BLACK BEANS

4 30 minutes 20 minutes

Ingredients:

Black Tilapia, gutted and cleaned 600g
Sliced ginger 10g
Shredded spring Onion 15g
Shredded red chilli 5g
A few stems of Coriander

Seasoning:

Cooking oil 10ml
Chinese cooking wine 10ml
Seasoned Soy Sauce 15ml
Fermented black beans 10g
Sugar 2 teaspoons

Preparations:     

1. Make 3 deep diagonal slashes on each side of the fish.

2. Chop the black beans; place half of the black beans, spring onion and ginger on a plate and place the fish on top.

3. Sprinkle sugar onto the fish, then pour the Chinese cooking wine, seaoned soy sauce and cooking oil on top; cover the fish with remaining black beans, red chilli, spring onion and ginger.

4. Steam on high heat for about 17 minutes.

5. Garnish with coriander stems and ready to serve.
